Ingredients
- 1kg ratte potatoes
- Olive oil
- 1 head of garlic, broken into cloves
- Some sprigs of thyme or rosemary
Method
Cook the potatoes in salted water for 15 to 20 minutes or until tender
Drain and allow to cool slightly
Heat the oven to 180C
Crush the potatoes to flatten them a little
Heat the oil in a heavy ovenproof pan on the bob and add the potatoes and friy them over a medium heat until they have coloured lightly. Turn them over and then once they are sizzling away throw in the garlic and herbs put them in the oven and cook for about twenty minutes or until nicely crisp.
Lift from the pan and serve.
