Mesclun salad

Ingredients

  • A good bag of picked and washed mesclun salad
  • Some chopped shallot
  • Vinaigrette

Vinaigrette

It is a good simple dressing. Make this quantity and keep it in a bottle and use as needed.

  • 40ml red wine vinegar
  • 1 heaped tbs Dijon mustard
  • 1 pinch caster sugar
  • 20ml soy sauce
  • A good milling of black pepper
  • 600ml extra virgin olive oil

Method

To a large measuring jug add the vinegar, mustard, sugar, soy and black pepper. Take a stick blender to it and give it a good blitz for thirty seconds then add the olive oil in a good steady stream. Transfer the dressing to a bottle and store until needed.
